Temecula is known for Great Wineries and Craft Beer Makers, and now the City has its own Distillery. Kalifornia Distilleries is a new family business owned by a father and son team, both named Billy Tiller.
Their family has manufactured liquor for generations and they use the “old methods” mixed with current technology.
The result: Kalifornia produces some of the finest liquor money can buy.

The Tillers tradition of fathers teaching their sons can be traced as far back to 1731 in Cork, Ireland. “Anything past 1731 is speculation can we cannot verify, and with the Irish you need to be careful” said Tiller. “It has been important to our fore fathers that the legacy continues. They set the foundation for Kalifornia Distilleries without even realizing it’.
With each generation teaching the next, the Tillers have been able to preserve their historical family recipes and are excited to finally share them with everyone. The company currently distills three products. Vodka, Whisky and good old Moonshine.
They try to incorporate all natural, locally grown ingredients to produce Kalifornia Vodka. The main ingredient is sugar cane, which gives the vodka a hint of sweetness. It is distilled six times for optimal smoothness and flavor.
Kalifornia’s whiskey, like all whiskey is distilled mostly from corn. However they also add their special blend of rye and barley to add a distinctive, full flavor. It is then aged in oak casks that they previously used to age bourbon. Distilled 4 times the whiskey is smooth and warm. It can be enjoyed neat, on the rocks or in a wide variety of cocktails.
The Moonshine is hand-crafted from 100% estate-grown corn and barley, then distilled at least four times in an old school reflux still. It’s the same, authentic traditional way that moonshine has been made for hundreds of years.
At 100 proof, this all-natural, proprietary recipe is charcoal-filtered for the highest purity, quality and taste. A truly versatile spirit, it can be enjoyed neat, on the rocks and in a wide range of mixed cocktails.
